Chocolate, particularly dark chocolate, is high in antiinflammatories and antioxidants that may help prevent cancer and cardiovascular disease, and maintain cognitive function.
Chocolate and peanut butter are a match made in heaven. Try this week’s recipe for Peanut Butter Bon Bons (Buckeyes) for a taste of that classic flavor pairing. It was sent to CCSA as part of a series of emails from our resident chef, Dr. Linda Doody.

– Mark Twain
Notes
Since no actual cooking is involved, these candies, which resemble the nut of the buckeye tree, are fun to make with the kiddies.
Ingredients
- 18-ounce jar creamy peanut butter (do not use old-fashioned style or freshly ground. A shelf stable creamy peanut butter has sweetness and holds up better than the natural version)
- 1½ cubes butter, room temperature
- 1 pound powdered sugar
- 3 cups Rice Krispies-type cereal
- 1½ pounds semisweet chocolate, coarsely chopped
Instructions
- In saucepan, melt peanut butter and butter. In a large bowl, combine powdered sugar and cereal. Pour peanut butter mixture over cereal mixture and blend together with your hands. Form into ½-inch balls, Chill until firm.
- Melt chocolate over a double boiler. Dip peanut butter balls into melted chocolate so about ¾ of each ball is covered. Place on waxed paper-lined cookie sheets. Chill. Makes about 100.
